High Protein Gluten-Free Energy Bar (Vegan)

This is an easy and tasty high protein energy bar for the family . Garbanzo Bean Flour gives a boost of iron, magnesium, phosphorus, folate and is a good source of thiamin and vitamin B-6.

Garbanzo Bean Flour

Ingredients

  1. Garbanzo Bean Flour – 1 cup
  2. Shredded coconut (unsweetened) – 1/2 cup
  3. Cocoa Powder (Unsweetened) – 2 tbsp
  4. Dried prunes (finely chopped) – 1/3 cup
  5. Dates (finely chopped) – 1/3 cup
  6. Raisins – 1/3 cup
  7. Cinnamon Powder – 1 tsp
  8. Vanilla Essence – 1 tsp
  9. Coconut Oil – 1/3 cup
  10. Milk – 3 tbsp (or as needed)

Direction

  1. Mix all the ingredients well . Use around 3 tbsp of milk to make it into a smooth batter. (Not runny, but very thick smooth batter).
  2. Bake at 350F for 30 min in a tray.
  3. Allow to cool and cut into rectangular pieces.
  4. If you want the bars to be more firm , bake the rectangular bars for 10 min at 400 F.
  5. Enjoy this with kids on when you want some instant energy !

Chocolate Arrowroot Cookies (Gluten Free)gluten

Ingredients

  1. Butter – 1/4 cup
  2. Molasses / Organic Brown Sugar / Jaggery  – 2 tbsp
  3. Almond butter – 1/8 cup
  4. Cocoa Powder – 2 tbsp
  5. Arrowroot Powder – 1/2 cup
  6. Baking Soda – 1/2 tsp

Direction

  1. Mix Sugar and Butter in a saucepan
  2. Remove from heat and add other ingredients.
  3. Allow to stand for ten minutes. If the dough is not firm enough, you could add some more arrowroot.
  4. Make small circles and press in to a mold .
  5. Pre heat oven for 350F and bake for 10 – 15 min.
  6. The cookie would still be soft when you remove from the oven after 15 min, allow it to cool so the cookie would get firm.
  7. Enjoy !

Rice-Banana Balls

Enjoy this Gluten Free, Vegan Dish with your kids!

Ingredients

  1. Brown Rice Flour – 1 cup
  2. Coconut flakes (unsweetened) – 1/2 cup
  3. Bananas Ripe  – 2
  4. Water – 1 cup
  5. Cardamom Powder – 1 /2 tsp

Direction.

  1. Blend all the ingredients together to get a smooth batter.
  2. Heat a ‘stuffed pancake pan’ and add 1 tsp of coconut oil into each of its holes.
  3. Pour 3 tbsp of batter into each .
  4. Wait for one side to get cripsy.
  5. Lower the flame and flip each of the ball.
  6. Cover and Cook , till the balls are done.
  7. The outside of the balls would be crunchy and inside soft.
  8. Enjoy with kids !

Velvety Red Cake (Gluten Free, Vegan, No Bake, Natural color)

This is a very healthy and nutritious recipe that your kids would love to eat, and you would love to serve again and again!

Ingredients

  1. White Rice Flour  – 1 cup
  2. Coconut Milk – 1 cup
  3. Warm water – 1/2 cup
  4. Yeast – 1/2 tsp
  5. Organic Brown Sugar / Jaggery – 1/2 cup
  6. Beets (Peeled and cooked)  or canned beets- 1
  7. Cardamom Powder or Vanilla essence – 1 tsp

Direction

  1. Mix Rice Flour and coconut milk.
  2. Add yeast, warm water and 1 tsp of sugar and keep it aside for five minutes till it bubbles up.
  3. Mix this in to the rice coconut milk mix and keep it covered for  3 -4 hours . Let it rise and bubble up.
  4. Peel the beets and cook it. You could steam the beets to keep its nutrition if you are using fresh. You could also use canned beets.
  5. Blend the rice mixture with sugar and beetroot and add vanilla essence or the cardamom powder.  Note: If you are using whole cardamom, open the pod to get its black seeds and powder it using a mortar and pestle and add the black seeds to the mix.
  6. Transfer the batter to a steel or glass bowl and steam the batter for 30 to 35 minutes using a steamer.
  7. Note: If you do not have a steamer, you could double boil the cake. Fill a pan with water and keep the bowl with the batter inside the pan. Tightly close the pan. Keep it on the stove at high temperature for 30 to 35 minutes till the cake is ready. Prick using a tooth pick to see if the tooth pick comes out clean.
  8. Your cake is ready and enjoy with kids !

Sweet Potato Pudding (Eggless)

Sweet Potatoes are inexpensive, readily available and are high in Vitamin B6, C, D, iron , Magnesium, Potassium and carotenoids. They are naturally sweet  and have a bright orange color that would make it a tasty delight for kids.

Dates are high in fiber and Vitamins and is an excellent substitute for sugar .

Enjoy this healthy colorful pudding with your kids !

Ingredients

  1. Coconut Milk / Milk – 2 cups
  2. Dates – 5
  3. Sweet Potato -1 Peeled and Cooked
  4. Arrowroot Powder – 1/4 cup
  5. Cinnamon Powder – 1 tsp
  6. cookie cutter

Direction

  1. Boil the sweet potato well and peel it.
  2. Blend Sweet Potato, milk , dates in a blender.
  3. Dissolve the arrow root powder in some milk with a spoon and make sure all the lumps are removed.
  4. Mix the arrow root and sweet potato blend and transfer to a sauce pan.
  5. In medium heat, stir continuously till the mixture thickens.
  6. Sprinkle cinnamon powder.
  7. You could enjoy this warm or refrigerate it for a cool pudding.
  8. To get the shape in the picture, place a cookie cutter of flower shape on a plate and pour the pudding into it .Then freeze/refrigerate the plate.

Chocolate Banana Pudding (GlutenFree, Sugarless, Eggless)

Yummy Healthy Chocolate Pudding that no Kids can resist. Whats more, its sugar less !!

Ingredients

    1.  Milk – 16 oz  (approx 2 cups )
    2.  Banana – 3 (If they are really big two would suffice)
    3. Arrow Root Powder – 1/4 cup
    4. Cocoa Powder – 1/3 cup
    5. Vanilla Essence – 1 tsp

Direction

  1. Blend bananas , some milk ,  vanilla essence in a blender / mixer.
  2. Add cocoa powder and blend more till the powder is mixed in.
  3. Dissolve the arrow root powder in little milk and stir with a spoon, so no lumps remain.
  4. Add the arrow root with the banana, milk, cocoa mixture , and transfer to a saucepan.
  5. Add Vanilla Essence.
  6. Stir continuously in medium heat, until the pudding thickens.
  7. Transfer to a bowl , and refrigerate. (You could also keep this in freezer if you need this sooner.
